Although nearly 45% of Americans consume at least five servings of fruits and vegetables a day, iceberg lettuce, tomatoes, and white potatoes topped the survey participants' choice of vegetables. In fact, potatoes accounted for about 30% of their vegetable intake. No surprise, the most popular form of potato is French fries. The most popular fruit choices were bananas and orange juice.

Cruciferous vegetables (broccoli, Brussels sprouts, cauliflower, or kale), and dark green vegetables like spinach accounted for only 6% of vegetables consumed by survey participants.

This is unfortunate, because dark green, orange, and red fruits and vegetables are especially rich in phytochemicals, compounds that contribute to the disease-fighting reputation of these foods. Some act as antioxidants. Others appear to inhibit the growth of cancer cells. Deep-colored produce, like squash, carrots, tomatoes, broccoli, greens, blueberries, and strawberries, are also good sources of vitamin C, folic acid, and beta-carotene.

The researchers say that, now that Americans have gotten into the "5 A Day" habit, they need to work a greater variety of deep-colored fruits and vegetables into their meals.
