PUMPKIN SPICE BARS
Yes...you can have a delicious dessert when you're getting healthy. I say don't remove great food from your life, just cook it differently. I love to make these for snacks, for my Wednesday night Mini Church at the Swett's home. Everyone enjoys them and I feel great they're eating healthy. You can frost them with my low fat cream cheese frosting or just sprinkle them with powder sugar.
8 egg whites
1&3/4 cups sugar
1/2 cup + 1 T unsweetened strained applesauce
16 ounces (2 cups) can pumpkin
1 cup unbleached flour
1 cup whole wheat flour
2 t baking powder
1 t baking soda
3/4 t salt
2 t ground cinnamon
1/2 t ground ginger
1/4 t ground cloves
1/2 cup raisins (they're full of iron)
Preheat oven to 350.
Spray one 15&1/2 x 10&1/2 pan or two 13 x 9 pans lightly with vegetable oil.
In a large mixing bowl beat together egg whites, sugar, applesauce and pumpkin.
In a medium mixing bowl mix all dry ingredients.
Stir dry ingredients into pumpkin mix. Pour batter in to pan or pans and spread evenly.
Bake 20 to 25 minutes, or until knife or toothpick inserted in center comes out clean.
If you're going to frost the bars, let them cool first. If not, sprinkle on your powdered sugar.
Cut into 2 inch bars.
