Whole Wheat Oatmeal Raisin Cookies
Makes 5 dozen cookies
1 cup raisins
1 1/2 cups water
3/4 cup butter
1 1/2 cups sugar
2 each eggs
1 teaspoon vanilla
2 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking powder
3/4 teaspoon ground cloves
2 cups rolled oats
Simmer raisins and water over low heat for 15 minutes. Drain raisins, reserving the liquid. Add water to reserved liquid to measure 1/2 cup.
Mix butter, sugar, eggs and vanilla until well blended. Add the reserved raisin liquid along with the remaining ingredients.
Drop by heaping tablespoons about 2 inches apart onto ungreased baking sheet. Bake in 400ºF oven for 9 to 10 minutes or until light brown. Remove from baking sheet immediately and cool on wire rack.
